The blades of Opinel carbon knives are made from high carbon steel, which allows for excellent hardness after heat treatment, guaranteeing blade strength, wear resistance and easy sharpening. The hardness obtained after heat treatment is theoretically slightly higher in steels that do not contain chromium. Cutting strength is therefore better with carbon steel knives and sharpening is much easier than with stainless steel knives containing chromium.
Carbon does, however, have a low resistance to moisture-induced corrosion, which means that certain precautions are necessary when using and storing carbon knives; it is recommended to avoid damp environments and to dry the blade after each use.
